Curry Night

I need to go grocery shopping but it didn't happen. Last night I used what we had and it ended in a yummy chicken curry with fried rice.

In the past I have mainly used curry paste or a sauce of some kind. Last night I used my Trader Joe's curry powder and a can of coconut milk.


I didn't use a recipe but there are tons out there. I began by sauteing half of a diced onion in a pan with a little bit of olive oil.


I used chicken tenders that hadn't defrosted all of the way. It makes it so much easier to cut when it is still a bit frozen.



Throw chicken in with the onions. Salt and pepper your chicken! Then add curry powder and a little bit of red chili flakes. Cook until chicken is no longer pink. Oh and I also added some dried cilantro. Would have been awesome with fresh as well.


Then add the coconut milk. Yum.


Let it hangout over a low heat so all of the flavors blend.

While the curry was becoming awesome I started my fried rice. The number one thing that I have learned when it comes to fried rice is that the rice needs to be leftover. Fresh rice does not work. So make lots and keep some in the fridge for when you want to try a "take out" type of fried rice.

Begin by heating some oil, I used coconut. Add the other half of the onion. Then add some sesame oil, just a little bit. The sesame oil is what gives it that "take out" flavor.


You can throw an egg in there and fry it up too, but I forgot.

Add the rice.

 Then add some frozen peas...or whatever you want!


 The final product was really good. It needed a fresh herb but didn't have any this time.


 The dish went excellently with the beer my husband shared with me. He's so sweet.

Yesterday I turned 28 years old.
I am incredibly thankful.
Thank you for life God. 

My awesome hubby gave me a lens for the camera my sister GAVE me. I cannot wait to experiment and grow in my camera skills. If you know me at all, then you know I adore pictures. I am one who loves sitting and going through photo albums. 
Now I have the chance to take good quality pictures. 

I also made my birthday cake. Same cake I made and blogged about last year. It's yummy. You should make it.

Oh Blog...

I want to start blogging again. I have a lot I want to write about. I want to write about new experiences, along with the food, film, and fiction adventures.

I am now the proud owner of a sewing machine. I am slowly learning. So far I've just made two burp cloths...not super fancy but I MADE THEM! Babies burp (crazy projectile spit-up) on them...so you don't want them too fancy. :)

I also was given a really nice Canon camera by my photographer sister. I just need to buy a lens...they are expensive. I can't wait to start learning!

So those are two new things I will be experimenting with and learning about.  I think I will love writing about these adventures, and I hope you enjoy reading about them.

I have a new baby girl! She is 2 months old now and I'm so in love. Being a mommy of two awesome little ones is something I thank God for every second, even in the seconds that seem hard. I'm learning to be thankful for all the moments. With the second baby here now I am 100% certain that time is flying by at speeds I'm not crazy about. God has been showing me that it is okay. I don't need to sit around and pout about it...that will just guarantee that I miss a moment with my babies.
So here's to enjoying all the moments, even the ones where I feel like freaking out. :)
